(61) Spaghetti with Tuna Heat @ Incanto Restaurant & Wine Bar

Incanto is located on the quieter side of Church Street in lower Mission / Noe Valley. This pasta dish consists of spaghetti, Sardinian cured tuna heart shavings, egg yolk & parsley. The server told the back of the house that I came there specifically to try this dish and they went heavy handed on the tuna heart :) It was super salty and the shavings melted in my mouth instantly. The spaghetti was cooked perfectly al dente and the yolk provided a nice little sauce. I'm a big fan of Chris Costentino > his nose-to-tail butchery philosophy/practices, and of course, his punny website name Offal Good Haaaaaaaaaaaaaaaaaaaaaaaaaaaaaa YES. Congrats on winning Top Chef!
